Chef Sandoval blends traditional Latino flavours with global ingredients in this chic beachfront dining venue.
Four Seasons Resort Punta Mita in Riviera Nayarit, Mexico continues to refresh its culinary offerings with the addition of the Bahia Coastal Latin Grill by Richard Sandoval, a coastal Latin grill. Chef Sandoval’s newly crafted menu reinterprets coastal Latin cuisine at the Resort’s oceanfront dining venue by blending traditional Latino flavours with global ingredients.
The Resort’s partnership with celebrated Mexican chef Richard Sandoval began in 2009, when he re-envisioned Ketsi restaurant, bringing a contemporary spin on classic Mexican cuisine. Now turning his attention to Bahia – the Spanish word for “bay” – the new concept emphasises the fresh produce and seafood coming from the shores and lands of Pacific Mexico, enhanced with Latino flavourings.
“The dining room a Bahia serves as a theatre to view the beautiful shores at Punta Mita. Similarly, the menu is a showcase for the region’s fresh and abundant seafood,” says Chef Sandoval. “My style is about bold, Latin flavours. It is important that my dishes are vibrant yet well balanced. At Bahia, I use pan-Latin ingredients and cooking techniques to add extra depth and unexpected nuances to local ingredients and regional recipes.”
Bahia’s prime location on the Resort’s Las Cuevas beach on the Pacific Ocean, nestled among giant manzanilla trees, is the perfect showcase for Punta Mita’s luscious natural beauty. Open for dinner, the grill offers a relaxed atmosphere with a sleek, modern design. At sunset, it is casual enough for guests just off the beach; at night it transforms into a chic venue not only for dining, but cocktails and conversation as well. The covered dining area is open to the soothing sounds of the sea. Guests may choose to dine directly on the sandy beach, with tables lit by bamboo torches.
What’s for Dinner?
Guests can start their meal with a variety of small plates, made for sampling and sharing, such as amberjack tiradito (grilled fish with apple, mint, radish and chile de arbol), fresh Baja California oysters, or crispy fried calamari in a lime pepper aiolo with pickled jalapenos. From the wood-burning grill, fresh seafood can be chosen and served ocean-to-table, plus prime cuts of beef, or pork and chicken seasoned with vibrant Latin marinades, such as the adobo – a robust mix of smoked chilies, sesame, ginger and achiote – are featured. Signature sauces and spice blends accompany each dish, along with plentiful sides of local market produce, or classics like mac and cheese or truffle parmesan French fries.
Seafood lovers can participate in the Resort’s acclaimed “Catch of the Day” program, where guests join the chef on the beach to choose from a selection of fresh catch delivered by the local fishermen. Guests may then request their preferred method of preparation including a simply perfect roasting on their wood-burning grill.
The inviting Bahia Bar features an ocean–themed oval bar, where guests may also choose to dine. Original cocktails and muddlers, such as the Caipirinha Bahía, offer the perfect tropical complement to this seaside setting. Premium beverages range from a menu of enticing martinis to the region’s finest sipping tequilas. A generous selection of wines by the glass if offered, together with a main wine list that hosts a roster of varieties representing both old and new world regions.
