A culinary leader possessing a wealth of experience in the kitchens of luxury resorts throughout Mexico, Chef Tonin has created a new menu at Sea Breeze, which overlooks the pristine beaches of Bahía de Banderas and features contemporary cuisine with Italian influences in a relaxed bistro environment.

Chef Tonin comes to The St. Regis Punta Mita Resort from Da Marco Italian Restaurant in Shanghai. Prior to that, he served as the executive sous chef at the Presidente InterContinental Hotel Cozumel Resort & Spa Mexico, where he was responsible for the culinary program at the acclaimed Alfredo di Roma Italian restaurant. The chef also honed his craft at Hotel Villa del Palmar in Cabos San Lucas; Ristorante Da Giorgio in Cabos San Lucas; and at Alfredo Di Roma restaurants at the Hotel Presidente InterContinental in Los Cabos and Mexico City.

Highlights include Artichoke Salad with Green Beans and Eggplant Caviar, a traditional Mediterranean salad with extra virgin olive oil, Serrano ham and cherry tomatoes; Spice Tagliolini with asparagus, shrimps, and chili from Southern Italy; and Organic Chicken Breast Stuffed with Spinach, a typical dish from Northern Italy that is served with homemade raviolis and pepper sauce.
