Viva Mexico! brings sizzling Latino flavours to Hong Kong this June with guest chef Jorge Gonzalez from Four Seasons Hotel México DF. Accompanying him on a 10-day tour will be tequila barista Alfredo Sanchez, hailing from the beautiful Four Seasons coastal resort in Punta Mita, México. The Lounge and the Blue Bar at Four Seasons Hotel Hong Kong will showcase special menus featuring authentic Mexican gastronomy and mixology from Friday, June 1 to Sunday, June 10, 2012.

The Lounge

Chef Gonzalez will have a sophisticated menu on offer displaying his unique and contemporary style of Mexican cuisine in The Lounge. Using ingredients at the heart of Mexican street food, his roots lie in his home town of Guadalajara, where his passion for food developed. At an early age, he began to gather accolades being awarded the national title “Young Mexican Chef” in 2006 and claiming the honourable prize of working with culinary wizard Ferran Adrià at el Bulli, Spain. Today, he is the Executive Sous Chef at Four Seasons Hotel Mexico.

Chef Gonzalez comes to The Lounge invited by the Executive Chef at Four Seasons Hotel Hong Kong, Hervé Fucho, who himself spent some of his tenure in the kitchens of Four Seasons Resort Punta Mita. Both chefs are excited to come together in this promotion that reaches Hong Kongers at a time when Mexican cuisine is so trendy in the city.

“I have such a strong memory of my time in Mexico,” says Fucho. “There is something about dining a la Mexicana that evokes great happiness and is the reason the country is known as a place of fiesta. We hope our guests will be able to experience a little of the deep-rooted heritage and joy that this food brings.”

The Lounge’s Viva Mexico! menu will offer a gastronomic journey that will redefine Hong Kong’s image of a fare known the world-over for its simple tacos and enchiladas. In addition to a three-course, set lunch menu, the promotion focuses on the evening à la carte menu of Antojitos (a selection of three per order), Pescados y Carnes and Dulces. Highlights include antojitos (appetizers) of veal “mojellas” and chicken huarache with refried beans and red mole; lobster ceviche with cucumber, red onion, tomato, cilantro and Huichol sauce; and braised oxtail and plantain sopes with avocado and spicy pickled red onion. Pescados y carnes (fish and meat) include lamb rump roasted in agave leaf with braised Baja squash; and sea bream zarandeado with Mexican rice, avocado salsa, grilled baby onion. Dulces (desserts) of Mayan chocolate cake; and tres leches cake with wild berry sauce. Alongside the menu will be Bebidas Y Tequilas – a selection of organic, premier tequilas and Mexican wines, sourced with the assistance of the Consulate General of Mexico and available exclusively in Hong Kong at Four Seasons during the promotion.

Blue Bar

From the Pacific shores of Mexico, Alfredo Sanchez is a bartender at Four Seasons Resort Punta Mita. Originally trained at the Tequila Mexican Academy in Mexico City, he comes to Hong Kong as tequila barista at Blue Bar and presents a fiery cocktail menu including classics and signature cocktails: Margarita Huichol (tequila reposado, Cointreau, chile serrano, lime and sugar), Rosa Maria (mezcal, organic pineapple, rosemary, lime and sugar) and Paloma (tequila reposado, grapefruit soda, lime and salt).

In addition to the cocktail menu, Chef Gonzalez will offer Mexican bar snacks and Sanchez will be on hand to talk and taste all things tequila, spotlighting the extensive selection of the country’s famed agave beverage that will be on display. He will also ensure the Blue Bar staff are fully versed in the drops of his homeland, so that the tequila fiesta will live on in Hong Kong through the scorching summer months.

  • A la carte dinner menu at The Lounge available from 6:00 pm daily
  • A bar snack menu will be available in Blue Bar 6:00 – 11 pm daily
  • Viva Mexico! cocktail menu and tequilas will be served by tequila barista Alfredo Sanchez June 1-10, 2012 and from then on the drinks will continue to be available in Blue Bar until August 31, 2012
