Southeast Asian Flavor Comes to Four Seasons Resort Punta Mita

The culinary experiences at Four Seasons Resort Punta Mita are continually evolving with new menus every year and seasonal adjustments to reflect the freshest local ingredients and harvests. At Aramara, Chef Esther Sánchez is bringing exotic new menus to life, inspired by her recent 27-day journey to Thailand and Vietnam.

 

After returning from Southeast Asia, Chef Sánchez took four full months to perfect the latest menu influenced by her travels, which includes 12 dishes and four new desserts exclusively for Aramara, reflecting flavors and techniques she experienced in both Michelin star restaurants and humble street stalls.

 

Esther will be changing menus to capture the cuisines of different Asian countries, but her current menu focuses on Thailand, with her favorite dish being her version of a “catch of the day” which she sampled in Bangkok. While paying homage to true Thai flavors, Chef Sánchez was challenged to source certain Thai ingredients and had to become innovative in the kitchen, for example, substituting Japanese shiso leaves in place of Thai betel leaves and using local arbol chilies to replicate that characteristic Thai heat. Her creativity has been exceptionally successful, producing beautiful dishes that have been extremely well-received by guests.
